To provide consistent quality of food andservices to internal and external customers, by adhering to and enforcing allMarriott Standards and Policies; training and guidance of trainees andattendants.

SPECIFIC DUTIES 工作任务 :
1. Supervises Western Kitchenpreparation shift operations and ensures compliance with all Food &Beverage policies, standards and procedures.

2. Assists ExecutiveChef with kitchen operations as necessary.

3. Recognizes superiorquality products, presentations and flavor.

7. Supports proceduresfor food & beverage portion and waste controls.

8. Calculates accuratetheoretical and weighted food costs.

9. Follows properhandling and right temperature of all food products.

10. Knows and implements Marriott's 70 Points of Hygiene and SafetyStandards.

11. Operates and maintains all department equipment and reportsmalfunctions.

12. Ensureall managers and associates follow all job safety regulations and all hazardsare reported to Loss Prevention and Engineering.

13. Tobe responsible for asset management of all outlet property and facilities.

14. Participates intraining staff on menu items including ingredients, preparation methods andunique tastes.

15. Trains associates insafety procedures and supervises their ability to follow loss preventionpolicies to prevent accidents and control costs.
