Plan, prepare, set up and strive for prefect service
quality in all areas of food production, for menu items and specials in the
designated outlets in accordance with standards and plating guide
specifications. Direct, coach, train and monitor performance of Chefs. Maintain organization, cleanliness and
sanitation of work areas and equipment.

The Role:

1.Maintain and strictly
abide by state sanitation / health regulations and resort requirements

2. Maintain complete
knowledge of correct maintenance and use of equipment; use equipment and tools only as intended,
properly and safely
保持设备使用和维护方面的知识完整性;按照预期使用设备和工具
3. Maintain complete
knowledge of and comply with all departmental/resort policies andprocedures
保持完整地了解并遵守部门/度假酒店所有的政策和程序
4. Meet with Chef De Cuisine
/ Sous Chef to review assignments, establish priorities, anticipated business levels, eventual changes
and other information pertinent to the job performance
与厨房主厨/副主厨会面核实下达的任务、确定优先顺序、预计经营水平、最终的变化和其它工作绩效相关的信息
5. Ensure that assigned
colleague have reported to work; document any late or absent colleagues
确保指定的同事按时到岗上班;若有迟到或缺席则需做好记录
6. Coordinate breaks for
assigned colleague
协调指定同事的休息时间
7. Prepare and assign
production and prep work for Chefs to complete; review priorities
准备和分配厨师需要完成的生产和准备工作;审查优先顺序
8. Communicate additions or
changes to the assignments as they arise throughout the shift. Identify
situations which compromise the department's standards and delegate these tasks
需要沟通协调在当班过程中出现的额外任务或是变化。确定这些情况是否损害部门的标准并且委派这些任务
9. Ensure that opening shift
completes start-up of kitchen line and designated prep work according to
department procedures

10.Set up work station with required mise-en-place, tools, equipment and
supplies according to standards
根据标准,按要求做好厨房配料、用具、设备等准备工作
11.Inspect the cleanliness and working condition of all tools, equipment
and supplies. Ensure everything complies
with standards
