This position is concerned with assisting Chinese head Chef to ensure and maintain a highquality for all Dim Sum items and being responsible for organizing and supervising in the production and presentation of Dim Sum Section. 面点厨师长负责保证提供高质量的面点并协助中餐主厨对点心房的运营和管理。
1. To be responsible for the production of all Dim Sum items. 负责面点房的所有产品。
2. To supervise portion control and presentation of Dim Sum items. 监督点心的客重和质量。
3. To be responsible for smooth running of Dim Sum Section. 负责面点房的正常运作。
4. To initiate and control purchases, store room requisitions and inter-kitchen transfers with Chinese chef’s approval. 管理并控制请购,仓库请购和中餐主厨允许条件下的内部调岗。
5. To ensure food served from the Dim Sum Section is of good quality. 保证面点房提供食物的高品质。
6. To ensure that mise-en-place is completed prior to service. 保证提供服务前准备好所需的东西。
7. To work as a team and offer help when needed. 有团队精神,有需要时向员工提供帮助。
8. To ensure proper handling of groceries and perishable food items. 对食品杂货和易腐烂食品有恰当的处理方法。
9. To keep working areas, Dim Sum equipment, refrigerator and B.B.Q. counter clean and in good condition. 保持工作环境,面点房,冰箱和烧烤柜台的清洁,并使其处于良好状态。
10. To perform any other duties assigned by the Chinese chef.
